Since my last appointment with my Primary Care I have realized I HAVE TO start eating better, I have no other option. I have to start watching my cholesterol, I'm at risk for diabetes with my auto-immune disease condition. It's depressing! Regaining all the weight I lost 2 years ago is depressing!
I have downloaded an app called FitCoach, paid $20 for a month and I've so enjoyed it. In it I get a meal plan, which I don't follow too closely, but I have appreciated come of the gluten-free recipes. I'm sorry, I can't put steak powder on a cauliflower and pretend I'm eating a steak and be happy. Who does that? Raw broccoli salad with Italian dressing for supper? I'm super gassy and still hungry. It helps me know how long to fast, right now I'm supposed to fast from 5 PM to 9 AM, I didn't last one night and ended up eating a whole bowl of white rice before I passed out.
In addition to great recipes I get workouts that I do with a girl on a video and the app tells me I'm "getting good at this." At which I yell "I'm trying", as I try to touch my toes, or find the right rhythm to do squats.
Last week I made a lemon garlic chicken "pasta" dish. My pasta was actually zucchini noodles. Food Lion has been my go to place to shop lately. In the back of the store around the produce are small boxes in a display box of sheet pan dinner starters. There is a Mediterranean flavor, Teriyaki, and Lemon Garlic. So easy and so good! I used Chicken Tenderloins. For my noodles I used a pesto sauce and cut up a tomato. Salt helps with flavoring. It was pretty good.

A breakfast dish I made my App called a Vanilla Bowl. I made vanilla flavored pudding with Almond Milk. Apparently there was something extra I was supposed to do, but didn't so my pudding was a bit soupy. I cut up fresh Strawberries, got some blue berries (berries are a low glycemic fruit/food) topped with (what I could find at Food Lion) KIND brand Healthy Grains. I got Cinnamon Oat Granola with Flax Seeds. It was very tasty and a great alternative to being dairy free (which I am that). Another option would be to add this blend to Coconut Milk. I recently learned Almond Milk isn't the best choice to dairy free alternative. It still has certain ingredients that cause bloat and gas.

This is what I made tonight. Eggplant Pizza Bites! I feel like this could also a substitute to lasagna, the eggplant be your replacement pasta. They turned out alright. For a lot of us its the tomato taste we crave and this hit the spot! I also substituted Turkey pepperoni as a healthier option to do a topping. You can be creative with this recipe. I LOVE a veggie pizza. Empire Pizza has a cauliflower crust that is amazingly good, you would never know it's a cauliflower crust. My dad likes it too.
This was my first time cooking, cutting up an eggplant. It was pretty simple.
Line your pan up, sprinkle salt, bake in 10 minute increments flipping the eggplant. What was great in those 10 minute increments I did one of my 7 minute work outs.
I'll share more food things as I make them, just getting started. My days of Door Dashing are for sure through! I've been going to the store after work. I made tacos the other night and they were so good! I don't know if they count as healthy, I think they are with the vegetables on it, and beef is good protein. Plus homemade vs. Taco Bell is 1,000% better.
